A perfect gift for the holidays, or a great way to treat yourself to something sweet and chocolate-y, without the guilt.  


50 g cacao butter nibs

65 g chocolate cacao nibs

200 g raw pitted dates

200 g whole almonds

75 g organic raisins

1 tbsp raw cacao powder

Melt the cacao butter and chocolate cacao nibs together in a sauce pan.  The best way to do this is to use the bain-marie technique and suspend the saucepan in a slightly larger sauce pan filled ⅓ of the way with water.  Mix the cacao butter and chocolate together as they melt until the mixture is smooth.  Then pour it into the Vitamix with the other ingredients and blend together.  The resulting batter should be dense and rather sticky.  Take this batter from the blender and begin to roll it into small balls, that can fit in your palm.  Place these on a plate and refrigerate.
