A few years ago we lived in a farm in the Rocky Mountains in Colorado for a whole summer. One of my duties was to take care of the irrigation system.

Without pipes and sprinklers, the irrigation was based on flooding. A complicated system of ditches was spread like a net in the groves and orchards, between the nectarines and the apricots, the cherries, the peaches and the apples. Especially apples. There are lots of apple trees there, and every tree needs water.

Wide ditches spread from the river that surrounds the farm, getting narrower as they branched in all directions. My job was to make sure they branch in the right direction. I spent my days happily with a shovel, opening blocked ditches, digging new narrow ditches to a tree that was not getting enough water, going to the border of the orchard… A hard and challenging job, but very satisfying.

I remember thinking: if only we could do it in Israel… but we don’t have enough water – right?

Now I understand that even here, with the water that we have, the flooding system was used on the border between irrigated agriculture and Dryland farming. It was done be diverting flowing water, or by growing crops near water sources – not by intensive watering from reservoirs.

I was reminded of this a few days ago, when I heard of an incredible experiment that Yoav has done in Yatir, in an ecological farm that specializes in growing medicinal plants, recycles used oils and grows most of its vegetables.

Now Yoav, one of the people who dreams of being an organic farmer and is interested in ancient agriculture, decided to try and grow garlic in methods based on the ancient ways of the Nabataeans. He relies on the long research and book by Professor Michael Even-Ari “The Negev – Survival War in the Dessert”.

The garlic is grown mainly on runoff water, with a system of dams and using the gravitational forces to bring water from ancient wells in the farm. The garlic has been grown with organic methods, using self-made compost from the pens in the farm.

The success was so great, that to this day the farmers in Yatir are looking for ideas what to do with the crops of garlic. Last week they finished collecting the crops, and are beginning to dry the garlic. In the next few days, you can buy garlic for 18 Shekels per kilo. In a month time, you can buy dry garlic.

We are going to buy braided garlic. These braids of dry garlic can keep, hanging, until the next season. Thus our home will boast of quality locally grown garlic for a whole year.
