2 egg yolks

A pinch of salt

1 clove of garlic

1 cup of fine olive oil



1. Crush together the salt and garlic

2. Add the two yolks and a little olive oil and continue to stir

3. Add the remainder of the olive oil gradually drop by drop while beating the mixture constantly

4. Continue to stir until a fine texture of mayonnaise is formed



You may add 1/2 a teaspoon of mustard seeds at the beginning

The mayonnaise can be prepared using a blender, we like using a mortar and pestle
